Gilt-head Seabream

The Gilt-head Seabream (Sparus aurata) called “Dorada” in Spain can be found in the Mediterranean Sea and the North Atlantic Ocean’s eastern coastal regions.

Typically found in shallow waters and feeds mainly on shellfish and other small fish.

Gilt-head Seabream has become an important aquaculture species, particularly in the Mediterranean area.

Low in saturated fats, it’s a healthy and delicious seafood choice:

Olives are a big family within the pickles and one of Spain’s most popular preparations, forming a fundamental part of the Mediterranean diet.

  • Vitamins A and E, which strengthen our defenses.

Green olives are the Spanish appetizer par excellence. However, in addition to consuming them as a snack or tapa, they can be incorporated into numerous recipes of meats, fish, rice, pâtes, salads, or pizzas.

Horse Mackerel

Horse Mackerel (Trachurus Murphyi), can be found in the South Pacific and Southwestern Atlantic, especially off Peru and Chile.

The meat is firm, and thanks to a high-fat content, well-flavored:

  • An excellent source of vitamins A, D, and B12.
  • High content of Omega-3 fatty acids.
  • Rich in proteins.
  • It contains minerals such as iron, magnesium, iodine, and potassium.

It is a well-known fish because delicious recipes and typical dishes are prepared in many cities, especially in Spain.

The Horse Mackerel, a bluefish, is widely consumed for its smooth and exquisite flavor. Vima presents it whole, and head-off gutted and tail-off.
They are perfect for all kinds of preparations, baked, grilled, stewed or pickled with the firm and very tasty meat.

Kingfish

Kingfish or King Mackerel (Scomberomorus cavalla) is iron-grey on the back and silvery on their sides and belly. They grow very fast and can grow up to 100 pounds and live for over 20 years.

Primarily found in the Atlantic Ocean, the Caribbean, and the Gulf of Mexico, but they are highly migratory.

Kingfish are:

  • Low in saturated fat.
  • Good source of vitamin A.
  • An excellent source of protein, vitamin B12, Selenium, and Phosphorous.

Lumpfish Roe

Lumpfish roe is a delicacy made of salted fish eggs. Lumpfish is a cold-water fish found mostly in the North Pacific Ocean.

The roe is dyed red or black and used as an alternative to caviar, which is far more expensive.

Lumpfish roe is high in vitamin B12, vitamin A, protein and magnesium, and an excellent calcium source.

Mackerel

Mackerel, also known as Atlantic Mackerel (Scomber scombrus), is a small oily bluefish found in abundance on both sides of the North Atlantic Ocean.

The skin is thin and very smooth, with very tiny scales. The Mackerel’s defining characteristic is its brilliant greenish-blue and silver iridescent color. The meat is brownish, but when cooked is cream colored with a lovely strong flavor.

They are:

  • Rich in essential Omega-3 fatty acids.
  • High in protein.
  • A good source of Vitamin b and D and selenium.

Monkfish

Monkfish (Lophius spp) can be found in the Atlantic Ocean and in the Pacific Ocean.

The Monkfish is a large, deep-sea fish, with an enormous head that is mostly mouth and has sharp teeth. It is considered as one of the ugliest fish in the sea.

Fairly fast-growing, bottom-dwelling fish that reach maturity in about three to four years.

Monkfish is a good source of:

  • Minerals such as phosphorous and selenium.
  • Vitamin B12, B1, B3, and B9.
  • Low in fat.

Norwegian Atlantic Salmon

The Salmon is a bluefish, hatching in rivers and move out to sea as they grow and mature after which the adult fish move upstream again to spawn.

Norway and Chile are the main developers, their cold and clean waters find unbeatable conditions for their development.

Red Mullet

Red Mullet is found primarily in the Mediterranean Sea, the Black Sea, and parts of the North Atlantic Ocean.

They are red or orange in color, with white meat boasting a particular flavor. Today they are an inevitable element of delicious Mediterranean dishes and cuisine.

Saithe

Saithe (Pollachius virens) from the Gadidae family, is a white fish similar to cod or pollock, but it differs from them by the longitudinal lines along its back. Mainly fished in the North Atlantic.

Saithe, a white fish, stands out for its low-fat content, other notable nutrients are:

  • Especially rich in protein and low in fat
  • High in vitamin B12, and D
  • High in selenium, an important element in an enzyme that fights harmful chemical processes in the body.

Saithe distinctive flavor goes well with spicy dishes and as the meat has a firm texture is well suited for frying.

Salmon Roes

Salmon roe is a reddish transparent egg mass found inside the bellies of female salmon. It has a shiny appearance and is firm in texture and contains lots of protein, vitamins, and essential Omega-3 fatty acids.

It’s a mix of sweet and salty flavor, and the inside of the eggs is juicy. Salmon roe is very delicate, and the harvesting process is sometimes done manually.
