Anchovies in olive oil

The Cantabrian anchovy is a small fish that can live for about three or four years and reach a size close to 20 cm, with a silver belly and a grayish-blue back.

At Vima Foods we only use the highest quality anchovies, Engraulis encrasicolus, caught in the Biscayne Bay with traditional fishing gear and at the sardines optimum moment during the Spring season, when they rise to the surface and their fat increases to its highest point, as does its deep and intense flavor. Cantabrian anchovies are therefore considered one of the best anchovies on the market.

Vima Selection anchovies in olive oil are made by salting. After reaching their optimum level of maturation, they are filleted and cleaned one by one and carefully packed by hand in specially selected olive oil.

Anchovies are semi-preserved and mature over time, so it is important to store the cans at a temperature between 5 and 12ºC.

Light tuna belly in olive oil

Light Tuna (Thunnus albacares), also called Yellowfin tuna or Yellowfin, characterized by its yellowfin, is one of the most common fish used for canning. Its consumption is widespread throughout the world due to its organoleptic characteristics and because it is part of the Mediterranean diet.

Light Tuna is an excellent source of proteins of high biological value, vitamins, and minerals, with the advantage that it is low in saturated fat and has a high content of omega-3 fatty acids.

The belly is the part of the light tuna located in the ventral area. It is characterized by its higher proportion of fat, its gelatinous and laminated meat, and its intense flavor, which is why it’s so highly appreciated by consumers.

The Vima Selección light tuna belly in olive oil has been carefully selected from the highest quality tuna, packed by hand, and complemented with only olive oil and salt; the best way to appreciate this authentic delicacy.

Mussels in pickled sauce

Vima Selección pickled mussels are made with mussels from the Galician Rías and packaged and sold under a certificate of Denomination of Origin, which ensures their traceability.

Only the Galician mussel brand certifies that the mussels are harvested, processed, and made in Galicia; the authentic mussel from the Galician Rías.

The Galician mussel (Mytilus galloprovincialis) feeds by filtration, taking advantage of the phytoplankton found in seawater of Galician Rías, considered by FAO as one of the most important fishing areas on the planet.

The starting point for the elaboration of a top-quality pickled mussel begins with a careful selection at its optimal moment and once the mussel reaches its largest size.
The mussels are cleaned manually, fried in olive oil, and packed in a soft red pickle, an ideal cover for this mollusk. Through this method, mussels with a firm and tender texture are obtained, which provides a good dose of energy and guarantees a gastronomic experience like none other.

The varied source of nutrients found in the Rías Gallegas characterizes the nutritional properties of its mussels.

Sardines in olive oil

Vima Selection sardines (Sardina pilchardus) in olive oil have been fished at dawn, in an artisanal way, in the rich and fresh waters of Rianxo (Galicia – Spain) and immediately afterward carefully prepared while conserving a maximum degree of freshness.

These sardines are cut and headed by hand. They are steamed, roasted, and packed in specially selected olive oil. Each can will fit between 10 and 14 pieces.

The time elapsed between capture and preservation is minimal, thus obtaining a tasty product, with a silver and shiny appearance and with a soft and juicy texture that guarantees a gastronomic experience like none other.

In recent years sardines have acquired great fame for being food of high nutritional value. A can of sardines in olive oil contains a high concentration of vitamin B12 in addition to others such as vitamins D, K, and E. They are an important source of protein, sodium, and phosphorus.

Shrimps in garlic sauce

The prawn, known as the Argentine or southern prawn or shrimp (Pleoticus muelleri) is a swimming decapod crustacean that lives mostly in the waters of the Southwest Atlantic Ocean.

It is one of the most commercialized seafood, sold fresh, frozen, and increasingly canned. It is a very appreciated product in the international market both for its organoleptic qualities and for its nutritional characteristics.

Argentine shrimp can be used in the kitchen for an infinite number of dishes, whether they are cooked as an appetizer or as an ingredient in ceviche, rice, or salads. They are a source of protein with high nutritional value, while their fat and carbohydrate content is low.

Vima Selección Shrimps in a garlic sauce, are known for being a typical dish of Spanish cuisine. Perfectly clean shrimp that stand out for their flavor and aroma, packed in a soft coating of olive oil, garlic, and cayenne, which gives them an intense touch while being slightly spicy.
