Norwegian Atlantic Salmon

The Salmon is a bluefish, hatching in rivers and move out to sea as they grow and mature after which the adult fish move upstream again to spawn.

Mainly fished in the cold waters of the northern hemisphere, and is noticeably developed in captivity in open waters.

Norway and Chile are the main developers, their cold and clean waters find unbeatable conditions for their development.

Salmon is also very versatile. Pink-colored, compact, juicy, very tasty, and aromatic.
Salmon is one of the most nutritious foods:

  • High content in proteins and Omega-3 fatty acids, which help lower cholesterol and triglyceride level in our organism.
  • Rich in Vitamins A, D, B12, and riboflavin and antioxidants, which may reduce the risk of heart disease.

Atlantic Salmon is the only salmon species whose natural home is in the waters of the Atlantic Ocean, as all other natural salmon species are native to the Pacific Ocean.

The main species we work with at Vima due to their high quality and flavor are:

  • Atlantic salmon (Salmo salar) mainly from Norway and Chile, presented in fillets, skin-on, and vacuum-packed.
  • Chum salmon (Oncorhynchus keta) from the cold and wild waters of Alaska, which has a compact meat and intense flavor, presented in fillets, skin-on, and vacuum-packed.

Octopus

Octopus is a cephalopod with eight arms, not tentacles, lined with suction cups. They have almost entirely soft bodies with no internal skeleton. They are found in tropical, subtropical, and temperate waters around the world.

Highly intelligent, sharp eyesight, an outstanding sense of touch, and have built-in defense mechanisms.

Nutritionally is a complete food, highlighting:

  • High mineral content, standing out zinc.
  • High protein intake.
  • Vitamins A, E, C, B1, B2, B3, B5.
  • Low cholesterol content.

Typical in Mediterranean cuisines. Vima Octopus is presented in many forms, to satisfy every customer need as the octopus is versatile.

Oyster

Oysters are bivalve mollusk in the family Ostreidae, and there are some 200 species worldwide. They are filter feeders that absorb their food by pumping water through their systems and extracting the small organisms they need.

Oysters have a sweet and mild flavor; they should be plump, have a good color and smell of the sea.

Oysters are:

  • Low in calories.
  • Rich in iron and vitamin A, B, and E.
  • Have a decent amount of Omega-3 fatty acids.

Vima presents the Pacific Oyster (Crassostrea Gigas), a product from France whole with both shells on. It has thrived almost everywhere in the world wherever it was introduced, thus making the name somewhat confusing.

They are harvested year-round. Grown on managed sea beds and collected in traditional ways using small boats, tongs, and small dredges. It is the most widely farmed oyster in the world.

Typically eaten raw, oysters can be prepared in many ways, including baked, broiled, boiled, fried, grilled, roasted, smoked, and steamed. They require very little cooking and are a real delicacy.

Razor Clams

(Ensis Directus), better known as Razor Clam or Atlantic Razor Clam, is characterized by an elongated, razor-shaped, brownish shell. A hinge attaches the two valves in the anterior end.

The shell is slightly curved. They live in muddy or sandy sands in fairly shallow water. The size varies with age, reaching an average size of 12 cm when reaching the age of 4 years.

They are a very valued mollusk both for their taste and nutritional values:

  • They are high in protein and vitamin B12 and B1.
  • They are a high source of calcium, iron ore, and phosphorous.
  • Contain Omega-3 fatty acids.

Vima Razor Clams come from the Netherlands and are presented raw and in a neat tray.

Whether steamed, fried, or grilled, Razor Clams are delicious and very nutritious seafood.

The classic method for cooking Razor Clams is by steaming them as it brings out their sweet, delicate meat. On the grill is another perfect option. Don´t overcook them as the texture becomes rubbery.

Salmon Roes

Salmon roe is a reddish transparent egg mass found inside the bellies of female salmon. It has a shiny appearance and is firm in texture and contains lots of protein, vitamins, and essential Omega-3 fatty acids.

It’s a mix of sweet and salty flavor, and the inside of the eggs is juicy. Salmon roe is very delicate, and the harvesting process is sometimes done manually.

Fantastic for sushi plates and appetizers.

Sardines in olive oil

Vima Selection sardines (Sardina pilchardus) in olive oil have been fished at dawn, in an artisanal way, in the rich and fresh waters of Rianxo (Galicia – Spain) and immediately afterward carefully prepared while conserving a maximum degree of freshness.

These sardines are cut and headed by hand. They are steamed, roasted, and packed in specially selected olive oil. Each can will fit between 10 and 14 pieces.

The time elapsed between capture and preservation is minimal, thus obtaining a tasty product, with a silver and shiny appearance and with a soft and juicy texture that guarantees a gastronomic experience like none other.

In recent years sardines have acquired great fame for being food of high nutritional value. A can of sardines in olive oil contains a high concentration of vitamin B12 in addition to others such as vitamins D, K, and E. They are an important source of protein, sodium, and phosphorus.

Scallops

The Scallop is a bivalve mollusk. Dredges catch them on the offshore banks.

The meat of a scallop is nearly translucent, with a creamy look. Sometimes pink and brown spots accent the meat. It is sweet, ranging from mild to salty with a near-firm texture. Scallops are very delicate and require very little cooking.

Scallops have:

  • A low presence of calories as well as fat.
  • Rich in Omega-3 fatty acids.
  • An abundance of calcium and Vitamin B12 along with iron, manganese, and zinc.

Scampi

Scampi, Nephrops norvegicus, is a very popular European Lobster that is fished seasonally in spring and summer from Iceland to Western Norway and in the Mediterranean Sea.

Scampi is:

  • Low in calories yet rich in nutrients.
  • Good source of minerals such as Iron, Selenium, and Phosphorous.
  • A good source of Omega-3 fatty acids.

Shrimps in garlic sauce

The prawn, known as the Argentine or southern prawn or shrimp (Pleoticus muelleri) is a swimming decapod crustacean that lives mostly in the waters of the Southwest Atlantic Ocean.

It is one of the most commercialized seafood, sold fresh, frozen, and increasingly canned. It is a very appreciated product in the international market both for its organoleptic qualities and for its nutritional characteristics.

Argentine shrimp can be used in the kitchen for an infinite number of dishes, whether they are cooked as an appetizer or as an ingredient in ceviche, rice, or salads. They are a source of protein with high nutritional value, while their fat and carbohydrate content is low.

Vima Selección Shrimps in a garlic sauce, are known for being a typical dish of Spanish cuisine. Perfectly clean shrimp that stand out for their flavor and aroma, packed in a soft coating of olive oil, garlic, and cayenne, which gives them an intense touch while being slightly spicy.

It stands out for having the following qualities:
