White Hard Clams
The White Hard Clam (Meretrix lyrata) is an edible saltwater clam. A marine bivalve mollusk. They grow naturally and develop well on the sand around the coastline of Vietnam in the Pacific Ocean.
When cooked, they have a soft and juicy texture and a unique flavor. They should be cooked very briefly to avoid them becoming chewy or rubbery in texture.
They are best eaten boiled, steamed, or roasted and can be served alone or in any pasta dish.

Monkfish
Monkfish (Lophius spp) can be found in the Atlantic Ocean and in the Pacific Ocean.
The Monkfish is a large, deep-sea fish, with an enormous head that is mostly mouth and has sharp teeth. It is considered as one of the ugliest fish in the sea.
Fairly fast-growing, bottom-dwelling fish that reach maturity in about three to four years.
Monkfish is a good source of:

Smelt
Smelt, (Atherina boyeri), are small, silvery herring-like fishes. Native to the eastern Atlantic Ocean and fished mainly in lagoons and estuaries.
They are:

Swai
Swai, scientific name (Pangasius hypophthalmus), is a freshwater species that feed on other fish, crustaceans, and plants.
Native to the Mekong basins, Chao Phraya, and other rivers of Vietnam, in South and Southeast Asia, Swai is an aquaculture fish.
Swai is a white-flesh fish, with a sweet, mild, taste and light flaky texture and stands out for the following characteristics:
- Low-fat content.
- Contains Omega 3 fatty acids.
- Rich in protein.
- Contains B group vitamins.
- Rich in minerals such as phosphorus, calcium, and iron.

Anchovy
Anchovies are tiny, very small saltwater fish characterized by a silver-colored longitudinal stripe from head to tail.
They can range from one inch to fifteen inches in length in adulthood.
They are found in all three oceans and the Mediterranean Sea and are among the largest capture fisheries in the world, Peru as the world’s top supplier.
Anchovies’ fat content is quite high and therefore tends to be presented cured.
They have a strong taste when cured, which works perfectly as an extra flavourful ingredient when paired.
