Alaska Pollock

Alaska Pollock (Theragra chalcogramma) is mostly fished in the eastern Bering Sea. Alaska Pollock is one of the world’s most important fish species in terms of the total catch. 

It is commonly used to make surimi and seafood substitutes, and it’s the star ingredient in some Korean dishes. 

Nutritionally, as a white fish, it is characterized by:

Anchovies in olive oil

The Cantabrian anchovy is a small fish that can live for about three or four years and reach a size close to 20 cm, with a silver belly and a grayish-blue back.

At Vima Foods we only use the highest quality anchovies, Engraulis encrasicolus, caught in the Biscayne Bay with traditional fishing gear and at the sardines optimum moment during the Spring season, when they rise to the surface and their fat increases to its highest point, as does its deep and intense flavor. Cantabrian anchovies are therefore considered one of the best anchovies on the market.

Vima Selection anchovies in olive oil are made by salting. After reaching their optimum level of maturation, they are filleted and cleaned one by one and carefully packed by hand in specially selected olive oil.

Anchovies are semi-preserved and mature over time, so it is important to store the cans at a temperature between 5 and 12ºC.

Anchovy

Anchovies are tiny, very small saltwater fish characterized by a silver-colored longitudinal stripe from head to tail.

They can range from one inch to fifteen inches in length in adulthood.

They are found in all three oceans and the Mediterranean Sea and are among the largest capture fisheries in the world, Peru as the world’s top supplier.

Anchovies’ fat content is quite high and therefore tends to be presented cured.

They have a strong taste when cured, which works perfectly as an extra flavourful ingredient when paired.

Atlantic Cod

Atlantic cod, (Gadus morhua) is fished in the North Atlantic, specifically in North America, southern Greenland, Ireland, and the European coast.

Atlantic cod, is a white fish that stands out for:

  • Rich in proteins and Omega-3 fatty acids.
  • Vitamins B1, B2, B6 y B9, D, E, and A.
  • A large amount of Magnesium.
  • Low-fat content.

Atlantic Pomfret

Atlantic Pomfret (Brama brama) is found in the Atlantic, Indian, and South Pacific Ocean.

They are:

  • Rich in Omega-3 fatty acids.
  • Moderate in fat content and provide Calcium, Magnesium, Phosphorous, and Potassium.
  • Rich in vitamins B12 and B3 and also in vitamin D.

Barramundi

Barramundi (Lates calcarifer) frequently referred to as Asian sea bass, native to Southeast Asia, and Northeast Australia. Barramundi spawn in the sea and often enter rivers before returning to the sea to spawn. It has successfully developed in aquaculture.

Interestingly, virtually all barramundi begin life as males and change to females later in life between six and eight years of age.

It is a very nutritious fish, ideal for a healthy and balanced diet.

Corvina

Corvina is a saltwater fish of the family Sciaenidae. Native to the temperate coastal waters of the southeastern Pacific Ocean. Its body is silvery overall with small scales. The meat is firm and delicate and has an excellent sweet taste.
