Kingfish
Kingfish or King Mackerel (Scomberomorus cavalla) is iron-grey on the back and silvery on their sides and belly. They grow very fast and can grow up to 100 pounds and live for over 20 years.
Primarily found in the Atlantic Ocean, the Caribbean, and the Gulf of Mexico, but they are highly migratory.

Toothfish
Toothfish (Dissostichus eleginoide) is found in the deep South Atlantic and the Southern Ocean around Antarctica. Toothfish do not mature for eight to ten years and can live as long as 40 to 50 years.
The fish has a very high quality, meaty, white flesh with few bones and a light buttery taste.

Swai
Swai, scientific name (Pangasius hypophthalmus), is a freshwater species that feed on other fish, crustaceans, and plants.
Native to the Mekong basins, Chao Phraya, and other rivers of Vietnam, in South and Southeast Asia, Swai is an aquaculture fish.
Swai is a white-flesh fish, with a sweet, mild, taste and light flaky texture and stands out for the following characteristics:
- Low-fat content.
- Contains Omega 3 fatty acids.
- Rich in protein.
- Contains B group vitamins.
- Rich in minerals such as phosphorus, calcium, and iron.

Saithe
Saithe (Pollachius virens) from the Gadidae family, is a white fish similar to cod or pollock, but it differs from them by the longitudinal lines along its back. Mainly fished in the North Atlantic.
Saithe, a white fish, stands out for its low-fat content, other notable nutrients are:
- Especially rich in protein and low in fat
- High in vitamin B12, and D
- High in selenium, an important element in an enzyme that fights harmful chemical processes in the body.
Saithe distinctive flavor goes well with spicy dishes and as the meat has a firm texture is well suited for frying.

Smelt
Smelt, (Atherina boyeri), are small, silvery herring-like fishes. Native to the eastern Atlantic Ocean and fished mainly in lagoons and estuaries.
They are:
- Low in fat and low in calories.
- A good source of Vitamin B12.
- Rich in minerals such as phosphorous, magnesium, and selenium.
Vima presents them whole. Smelt are often eaten whole. The flesh is generally bland and tender. It is usually cooked fried or roasted, and the bones soften when cooked and may be eaten.

Horse Mackerel
Horse Mackerel (Trachurus Murphyi), can be found in the South Pacific and Southwestern Atlantic, especially off Peru and Chile.
The meat is firm, and thanks to a high-fat content, well-flavored:
