For the coconut panna cota

Instructions
Preparation of the panna cota
Boil the cream, coconut milk, and coconut (after being hydrated 20 min in milk). Once boiling, add the sugar and the gelatin.
Once hot and thoroughly mixed, put the mixture in molds. Let cool by putting it in the fridge for 12 hours.
Preparation of the marmalade
Combine the red fruits (Vima) with the water, sugar, and lemon juice. Boil for 5 minutes and add the pectin diluted in cold water.
Allow cooling until the mixture is thick. Set aside.
Assembly
Cut a sponge cake the size of a panna cotta, place the now cold and solid mixture on top of the plate, and sauce over it with the marmalade.
