DESCRIPTION

 

The silverside (Atherina boyeri)It is a small, shiny, silvery fish similar to herring. Originally from the eastern Atlantic Ocean, it is mainly fished in lagoons and estuaries.

Nutritionally it stands out for being:

  • Low in fat and low in calories.
  • A good source of vitamin B12.
  • Rich in minerals such as phosphorus, magnesium and selenium.

Vima presents the whole silverside, since due to its small size it can be eaten whole. It is usually cooked fried or roasted. Its meat is soft and tender and has few bones that soften when cooked and are edible.
