DESCRIPTION

 

Deep sea cod (Dissostichus eleginoides) It lives in the deep waters of the South Atlantic and the Southern Ocean, around Antarctica. This species of cod is slow-growing and does not reach maturity until it is eight or ten years old, but can live up to 50 years.

It is a very high quality white-fleshed fish, with few bones and a light buttery flavour.

Nutritionally it stands out for:

  • Rich source of protein.
  • High amounts of vitamin D and vitamin B12, as well as minerals.
  • High concentration of Omega-3 fatty acids.

This is a highly valued fish by chefs and gourmets. Its high fat content provides an exceptional flavour and texture. The fillets are thick, white in colour and delicate in texture, and are excellent for grilling, baking, sautéing or even frying.
