Colar y reservar.<\/span><\/li>\n<\/ul>\n<p class=\"sub-title\"><strong><b>Preparaci\u00f3n del sofrito o pasaje<\/b><\/strong><\/p>\n<ul class=\"list_recipe\">\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Rehogar en el aceite la cebolla picada, el cebollino, el ajo y el jengibre rallado, a\u00f1adir despu\u00e9s el piment\u00f3n dulce y por \u00faltimo el tomate, las almendras tostadas y el pan frito.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Sazonar y triturar hasta conseguir una pasta roja y fina. Reservar.<\/span><\/li>\n<\/ul>\n<p class=\"sub-title\"><b>Preparaci\u00f3n del pescado y los mariscos<\/b><\/p>\n<ul class=\"list_recipe\">\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Cortar los pescados en 6 tacos iguales.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Contar una rodaja de bogavante por persona limpio o en su caparaz\u00f3n y machacar las pinzas para facilitar su cocci\u00f3n.<\/span><\/li>\n<\/ul>\n<p class=\"sub-title\"><b>Hacer la cazuela<\/b><\/p>\n<ul class=\"list_recipe\">\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">En una cazuela grande de barro para cocinar, una vez caliente a\u00f1adir el aceite y los pescados y el bogavante sal pimentados y enharinados, y dorar por ambos lados, a\u00f1adir entonces los calamares y rehogarlos hasta que queden de color blanco.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A\u00f1adir entonces el brandy de Jerez y flamear.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Seguidamente el sofrito, el vino blanco y el vermut, hervir y evaporar 2 minutos.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A\u00f1adir los mariscos poni\u00e9ndolos por encima en la cazuela y cocer a fuego medio cubriendo con el caldo.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Tras 5 minutos de cocci\u00f3n y cuando la salsa est\u00e9 espesa y los mariscos justos de cocci\u00f3n, espolvorear con perejil picado y parte de las almendras tostadas.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Dejar reposar ya que mejora la mezcla de sus sabores.<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Mojarlo con un buen vino Albari\u00f1o bien fresco y de la vendimia anterior.<\/span><\/li>\n<\/ul>\n<div class=\"divider\">\n<p
