European sea bass with passion fruit sauce and asparagus

Ingredients

For the sauce

  • 200 ml water
  • 100 ml passion fruit pulp or passion fruit
  • 50 ml honey
  • 1 cup soy sauce Vima
  • 1 cup pulp or tamarind juice
  • 1 cup orange juice
  • 1 g salt
  • 1 g ground black pepper
  • 5 g agar agar powder

Instructions

Preparation of the sauce

  • Mix all the ingredients and bring to a boil. After 5 minutes, add the agar agar powder in a blender and mix well.
  • Set aside once it is thick.

Preparation of the fish

  • Descale the European Sea Bass well, separate the two fillets and cut two loins from each fillet.
  • Season with salt, pepper, and lemon juice. Set aside.

Preparation of the asparagus

  • Cook in the oven, sprinkled in olive oil for 20 minutes at 150ºC, remove and cut all the same length, measuring from the asparagus tip.
  • Cut the onions and soak with the beetroot and raspberry broth for 30 minutes to give it the reddish-color and flavor.

Cooking

  • In a hot skillet, skin side first, cooks the fish, pressing with something flat to make it straight.
  • Place on top of the hot and juicy asparagus, and pour the sauce on top, decorating with the red onion.
  • Decorate with edible flowers, and some tender been sprout to make it fancier.
  • This sauce is recommended for any fish, enhancing the flavor making it a light and bittersweet tropical flavor.
